I'm not an experienced kimchi chef, just a novice who took a little kimchi making class and came home with a jar. It seemed to me that it would be much easier to ensure the absence of oxygen in kimchi if I used the E-Jen system with an internal lid to remove excess air. Aside from my own difficulties of not having the optimal amount of Napa Sprouts (it appears to be a container for two cabbages, not one), I was able to use this container with no problem. Overall I can say that this system was easy to use and I find it preferable to the can. We'll have to wait for kimchi to be discussed to see if it meets the same standards as kimchi made in the classroom under the teacher's watchful eye. Thank you for reading my review.
