I purchased a New Star Foodservice 42566 China Cap/Chinois Strainer to extract the juice from several gallons of elderberries and immediately noticed a significant deficiency in the first batch of berries. The cone of the wooden pestle is too small. When the tamper is in the strainer, the top of the cone is about 1/4 inch from the side of the strainer screen. As a result, the ram pushes the berries up and not against the grid. If the ram were designed with a top surface about 1/4 inch wider, the ram would contact the screen. I marked where the ram handle made contact with the top edge of the screen and used a Dremel tool to cut a groove around that area, essentially narrowing the handle where it hit the screen about 1/4 inch overall. This allowed the conical portion of the tamper to come into contact with the strainer and significantly reduced the pushing of the berries up by the tamper, rather than forcing the berries against the strainer as it should to extract the juice. How It Was Designed New Star Foodservice's 42566 China Cap/Chinois Strainer guarantees only two stars; It can be used if you only have a few cups of fruit to strain, but for a few gallons of small elderberries the product is almost useless, as intended. a ram with a wider cone so that the ram makes good contact with the screen. This redesign would create a much better product worthy of a four to five star rating.
