Ideal for a low carb lifestyle!

I've never used a potato masher but I love it! We're a fairly low carb family, so instead of potatoes we tried something else. I usually buy frozen cauliflower with rice or a head of cauliflower and chop it up with a food processor, but it's quite a process and usually makes a mess. What my husband and I did was cut up a head of cauliflower, steamed it a bit and put it through a potato rice cooker with a large perforated disc and let me tell you it was so easy and the texture was amazing! I'm not even sure how to describe it because it wasn't soft like frozen or wet like it was going through a mill and it wasn't a mess at all! Seasoned a bit and it was just delicious! We then tried making Jicama to make "low carb donuts". We cleaned the jicama, sliced it and cooked it for about 45 minutes (next time we'll cut it smaller or use a pressure cooker to save time) and put it through a rice cooker with a large perforated disc. It took a bit of work but the silicone grips were easy to hold and the results were amazing, they looked so much like real pancakes! We toasted rice jicama with butter and salt for our dummy potato pancakes and everyone ate it right away. My skeptical husband loved it and said he would definitely do it again! Next we decided on an egg salad. After boiling the eggs and peeling them horribly, we put them through the rice machine. We decided to try each rim size (as shown in the photos) and they all passed with no problem. We liked the disc with the big holes best because we prefer a larger egg salad, and it seems to work best for our other uses as well. After adding the mayonnaise, salt, pepper, and low carb bread, we have a delicious and very easy egg salad sandwich.
