Great knife - Cutlery and knife accessories

Excellent knife as one would expect from Shun. Bought as an upgrade/upgrade for my 8" Shun chef's knife which I have owned for over ten years. I work in a professional environment and have probably processed more food with this knife than most. a year later and it has held up very well. I back it up with a Shun steel honing rod and the blade is still perfect. The knife is beautifully finished and well balanced. The section that slides backwards also takes some getting used to, but I like it. This is the first Shun I have purchased with the VG-Max Steel which so far has been very impressive with its performance. There is a lot of material in this knife and it is impressive how light it actually is. So far I haven't found anything I don't like about this knife, very happy with the purchase. highly recommended.
