As mentioned, this takes a bit of getting used to. The first batch failed because I misunderstood that an egg is placed in a container of water and then water remains until the 80th line. If the dough is too wet, it won't turn into noodles - it twists and turns. I've also made buckwheat that was too dry and nothing happened - just tossed and tossed. But just dropped 1/4 teaspoon of water in it and it started working right away making beautiful noodles. Lesson Learned: Should be a lot drier than expected, but if the shade is just too dry a few drops will fix the problem. turned out great and very tasty. She cooked regular wheat, durum wheat, and buckwheat noodles. Everything went very well. Shelling most was easy, but removing buckwheat from spaghetti holes was very difficult - the needle provided had to be used for each hole and more than once as buckwheat is sticky. For wheat, it was easy to shell. Very impressed so far. I will try more recipes but once you get the hang of it it will be very quick and easy.
