Great tool: Hand Tools

I was pretty skeptical, but this thing really works wonders. Wedgek was my best buy this year. I just want to share my first impressions and my biggest mistakes.1. Sharpen with a coarse stone until you reach the FULL LENGTH tip of the knife. It's tempting to switch to a higher grit if the knife feels sharp in some places. If the edge is beaten and has dents, then it needs to be sharpened three times longer. Make sure no dents remain. Make sure you have a burr the entire length. If you miss this moment, any further sharpening will be useless.2. Learn how to remove a burr. Google or search the Wedgek website. Borscht is a real thing. Burrs need to be created and removed.3. When sharpening on the diamond stone, do not press the knife too hard. Do not press hard when sharpening.4. I've never had success honing. I always thought sharpening steel was a trick. No longer. It really works. I recommend sharpening with an orange cone. I do this for a week or two because I don't cook every day. Muscle memory is way better than I thought. With a little practice I can hold the knife very still. Just practice a little. Everything will be fine. I had no idea hand sharpening could be so much fun. The sharpness is incredible and feels very useful.
