If you knead a lot of dough and dough, this is the tool for the job.

This thing is so good that not only is it the right tool for the job, it makes the standard paddle attachment the WRONG tool. This cuts the time it takes to whip butter and sugar in half, not even counting the breaks to scrape out the bowl. You just don't have to. If you get it, check out this work. It's actually kind of hypnotic, but also a much better mixing device than the standard paddle attachment. Some other types of spare paddles work well for scraping the bowl. This is INCREDIBLE when mixing, which is the very purpose of a mixer. When to use: 1. Butter and sugar for cookies and cakes.2. Mix almost anything you can think of as dough, not dough, using a standard spatula3. Cookie Dough - to an extent (see tip #1 below) Benefits 1. Better mixing in less time than with a standard mixer attachment. No questions. Compare the two when you receive it.2. Without scratching the bowl. In my case, the whipping time for a standard cookie went from 3-4 minutes, with at least one stop to empty the bowl, to 90 seconds, and it whipped up better. Cons 1. Blades are harder to scrape than with a standard paddle attachment, hence more mallet waste. (Hey, more for licking the whisk if that's your thing.) 2. Cannot be used to "press through" very cold butter or harder foods or dough. 3. It has a lifespan no matter how well you treat it. The silicone blades start to break and come off after a while (years if done right). Accept this fact. It's still worth it. Tips: 1. Using chocolate chip cookies as an example, use SideSwide to whip butter with sugar, eggs and up to half the flour. Then replace it with a standard spatula for the second half of the flour and chunks. Half flour is usually the point where it crosses the dough-to-dough threshold. This extends the life of your SideSwipe.1a. I have to admit that if I'm just using minichips I don't bother replacing them with a standard manipulator. Anything with standard chips or more, especially nuts or chocolate chips, I change.2. As others have said, adjust the mixer height as needed.3. You may need to adjust the speed of this attachment compared to the paddle attachment. Try moving one click slower to get started and see where it goes. Adjust if necessary. This is my third. First I killed him with oil that was too cold and coarse stuff. Guilty. Second, I've just made a whole bunch of cookies and cakes with him. Lasted 3 years. I assume this one will do the same. Then I would like to buy more.
