
. This recipe (like many others) uses about 5 cups of flour and 1 cup of sourdough. I think this Banneton size was the perfect size for this amount of dough. Maybe you could even go down a size. I took some rice flour and dusted the inside of the banneton liberally to keep the dough from sticking. I didn't line it with the bag that came with it, but dusted the bag with rice flour and brushed the dough with it while it rested and rose. The dough didn't stick to this banneton at all, and my boule bounced onto the bowl without sticking. I made excellent bread. This kit also includes a lame that worked great.
