Review on πŸ”ͺ Steelex D1067 800 Grit Japanese Waterstone: Exceptional Sharpening Performance Revealed by Kevin Taharka

Revainrating 4 out of 5

Good medium grit water stone

I've been using this stone since 2010, about 5 years and it's holding up well. Given its thickness, I expect it to last a few more decades if not more (I use my stones about twice a month or so). First of all, it should be noted that this stone is not pleasant to use. What I mean? Well, some stones feel like nails on a board when in use. Using this stone is much more beautiful and pleasant. For my system, this is usually the stone I start with to re-sharpen knives I've sharpened in the past. With new knives, I usually want a coarser grit at first, since most factory edges have very coarse grinding marks and the edge geometry usually has to be adjusted to my preferences. If the knife you are working on, like many of the knives my friends are asked to sharpen, is so blunt and worn that there are large chips on the edge, you should start with a coarse-grit stone, not a medium-grit one, like These ones. As some of the comments from other reviewers might be confusing, I want to be clear that this is not a "finishing" stone. This is a medium grain stone. You can use it as a finishing abrasive and it will leave a more jagged edge, but this stone does not produce a "mirror finish". To do this, you'll need something like a 6000 grit water stone or higher (8000+ is even better). new cutting edge geometry / coarse chip grind, medium grit (10001200) - Start here for knives with proven cutting edge geometry and without coarse chips and decorative stone (6000+) - for a mirror-polished haircut. The only thing I can give (hence the 4 star rating) is the price. Currently, there seem to be more profitable options. When I bought this stone 5 years ago, I paid less than $20 ($19.73) for it. At the time of writing this review (June 2015), the price is $32.40. The King Deluxe #1200 stone (http://www.amazon.com/King-Deluxe-Medium-Grain-Sharpening/dp/B0016VE6D4/ref=cm_cr_pr_sims_t/182-8407115-4567522) currently sells for $21.97. there are other options. If you understand the purpose of this stone as mentioned above, it will be good for you too.
