PERFECT ! Pleasantly Surprised

The Mercer Slicer is a great knife for the money ($20). Here's how it compares to my more expensive Victorinox slicer ($50): 1. Both are razor sharp, out of the box.2. Both have embossed blades. (Stamped blades are lighter and more convenient to use than forged blades.)3. The Mercer blade is slightly thicker (harder) than the Victorinox .4. The Mercer is a more practical knife than the more elegant Victorinox or Henkel.5. Has a plastic handle. (In contrast to Victorinox wood.) 6. The hardness of the blade is 56 Rockwell C. This is the highest hardness of heavily heat-treated knives up to 0.7. Both cut the rib roast equally effectively. None of the knives are dishwasher safe. If you're looking for a great utility knife for everyday use, Mercer has you covered. However, if you want an expensive knife to impress your guests, buy a Henkel, Wรผsthof or Victorinox. My only criticism? I wish there was a protective case included. It's super sharp. Be careful with storage.
