A must have tool for any heavy smoker

I was impressed with the high quality, sharpness and value of this knife. This makes it easy to slice everything from brisket to ribs. Razor sharp out of the box and at a good price. They're very hard to find at any hardware store, and while I have a good woodcarving set, the extra length and serrated sides of the blade reduce drag and make cutting very easy.

super sharp! suitable for kitchen and dining room

This knife did an incredible job. I was initially skeptical of other reviews because they said the handle was not designed to protect the user's hand from getting higher on the blade which would result in an immediate trip to the hospital. I'm happy to report that with a firm grip on the handle (as it always should be) the knife performed phenomenally. This is the sharpest knife I have ever owned and it cuts through large chunks of meat like a hot knife through butter. I tell everyone I know…

Quality knife with a well sharpened blade

I didn't expect too much from this knife and I only bought it as I didn't want to risk my Wüsthoff knife. The blade of the knife is a full 11 inches long and almost too big for my knife block. It cuts meat, hard cheeses and vegetables very cleanly with minimal pressure. I love that he cuts fries by hand to perfection and yesterday I cut a whopping 10 boneless pounds. Slice the ham evenly. Samurai Sword? Type

I saw a package on my doorstep as I pulled into my driveway. The size of the box indicated that I was not receiving an 11 inch guillotine but an 18th century samurai sword. nope Just a knife in a plastic bag. No filler, foam rubber peanuts. dream knife!

Unwrapping this knife (which ended up in the biggest box I've ever seen) my anticipation quickly turned to excitement as the overhead lights reflected off the blade and almost everything within dazzled by 10 foot radius . This knife is super sharp as many reviews have said. I've been using it for a while and haven't seen any signs of it dulling or reducing its ability to do its job. This knife cuts through breast, steaks, pork tenderloin, tenderloin and ham like butter. I'm very happy to have seen all the other reviews showing people cutting themselves with this knife that have not yet experienced it due to the extra care I take with it (mainly because of those reviews). Trust them when they say it's sharp

I keep it in the original packaging because I don't want to risk cutting myself. Also, it's too long to fit in my knife block. So now to the point itself. Not only is it flavorful and pungent, but it's also easy to control and cut through roasts and roasted meats. That's why I bought it. I love the Mercer Culinary brand.
