What an update! My partner and I have used a double ended diamond file to sharpen our knives for many years. This purchase is such a brilliant level! Gloves and manual make it safe and easy to use. Due to the variety of stone grains, you can achieve a level of sharpness that cannot be achieved with a double-sided coarse and fine sharpener. And with the leather strap, you can go from sharp to razor sharp! I use my kitchen knives for work as a chef and once my partner finished sharpening them with this set I was able to glide through veggies and raw meat like clockwork! In my hands they were like new knives! My partner showed me that he was literally able to shave off some of the hair on his arms after he finished sharpening them! He has been sharpening our knives with a double-ended diamond file for years, both for cooking and for carving. Now, with this new set, he's thinking about offering his sharpening services professionally. We are very happy with this set and even happier that we can sharpen and maintain our knives better.
