I love making pizza and I also make my own whole wheat flatbread. The pizza needs to cool on a wire rack to keep the crust crisp. That's great. When fully folded, it is a single frame. When you open it it can hold 3 or four (but I would only need 2) pizzas. Very good. For Lavash, it's exceptional. I usually knead the dough for a dozen pitas. I have two hot pans and I make two pitas at a time. As soon as they come out of the pan, they need to be sent to the grill. I've tried using an oven rack before but quickly ran out of space (each pita takes about 3-4 minutes to cook, much less than the time it takes to dry. Stuffing the whole flatbread in there was risky) . . on the grate in the oven. It worked, but what the heck. Okay, so with this grid I just push them to the bottom layer, then put a few more on the bottom layer, then a few more on the next layer above, then two more, then add two to the top layer and two more three layers easily fit all 12 pits. At the end of cooking I give another 15-20 minutes to cool, then all the pitas can be put in a bag and in the freezer. There isn't much ice in the bag, pita breads don't freeze too much (because they weren't dry), that's what you need. If you bake your own flatbread, you'll quickly discover that almost all commercial flatbreads use preservatives, even those that claim they don't have any(!) because your homemade flatbread will start to get moldy within 2 days. Wash the pitas and it is very important that they dry properly before freezing. This stand is perfect for that. If you want to increase the recipe to 24 pitas turns out you can make 12 on the rack and then when you're ready to cook #13 and #14 you can remove the pitas on the bottom and replace with new. This way you can keep spinning and making as many pits as you want without taking up more rack space. But for most homemade flatbread makers, 12 is enough for a batch. I like that I can roll it up and use it as a layer on pizza. It's perfect for anything that needs rack cooling. The price was right too. Yes, it is made in China. So good luck finding something that doesn't exist. Our American manufacturers just couldn't keep up, so they created all these Chinese factories. American labor is more expensive, that's the reality. So instead of whining and complaining about Chinese manufactured goods, consider educating yourself and doing smart jobs and giving the Chinese extremely low wages for brain-wrecking manufacturing jobs. I worked in production for a while. It messes with your mind and makes you hate yourself. let her do it
