The design is superb as is the construction. I'm used to using a big pot without kids or even a sink! Advantages - Robust construction - Perfect size. I did a Boston butt this week, Chuck Roast. Both weigh around 4-5 pounds - water retention is excellent. Cook 40 hours and you might lose 1/2 or 1 inch of water. Disadvantages: wide rim. Not exactly a cheat, but I had a hard time stretching the Jool clamp over the edge. Now I'm fine and I figured out the best practices. Too bad I haven't bought it for a long time.
