I baked Portuguese sweet bread the same day the kneading hook arrived. I have used the dough hook that comes with the KitchenAid Mixer (K5SS) to make many types of bread for over 30 years. The spiral hook greatly improved kneading. There is more contact and actual "folding" with a coil attachment than with a hook. Although this recipe made a soft dough (compared to the classic French bread or sourdough recipe), it performed well when I ran the window test. I was very pleasantly surprised at the improvement in kneading with the spiral hook and have no plans to use the C-shaped hook again!
