If the bottom of the pan is even slightly warped, the oil will be heated unevenly. Well, the bottom of this pan was deformed after the first use. The first time I cooked with it I used it on low heat and it was perfect - a perfectly flat bottom and the teaspoon of canola oil I added spread evenly across the bottom. I let the pan cool to room temperature before hand washing. But the second time I used it (to fry pancakes) I saw that the oil was dripping from one side. It was almost impossible to make pancakes that were evenly browned - I had to keep tossing them over the pan to even out the browning. Very disappointing pan with such excellent reviews. I threw the pan away after dealing with the warped bottom issue a few more times - the uneven cooking really affected the quality of my dishes. I also found the pan too heavy for comfortable use. I'm a middle-aged woman, but I lift weights almost every day, I'm very slim and fit, and I still find this pan too heavy. It was a disappointing purchase.
