Edit: 6 months later and this thing is still razor sharp. The sharpening angle and thickness seem to keep it sharp. I left a few drops of water on it which caused a little rust but it polished. Another train and another tank. Fantastic knife! Arrived sharp and the build quality is solid. Compared to the 8" Victorinox chef's knife (which always wins best knife), this is a much more comfortable knife to use. The blade is thicker, but its sharpening angle makes it easier to cut vegetables and meat. It's not heavy, but has a weight so you can let the weight of the blade do most of the work. The blade has a nice undercut for your finger that blocks it when you're using a pinch grip. A few things to note out for - the Handle is round rather than square so if you like the ergonomic look (like the Victorinox) you may be disappointed I prefer this shape as it provides a secure grip but to each their own for a carbon steel blade (which it is). Please never put your chef's knife in the dishwasher. All in all, this is a killer knife at an amazing price. It has become my assistant in almost every kitchen task.
