Makes cute carrot roses. It's easy, I peel a carrot, cut off the ends, stick them in and it works like a pencil sharpener. I think it can also be used for sushi as it makes nice flat ribbons. I love these types of carrots in salads - they don't all sink to the bottom and are large enough to add real carrot flavor to the salad. Seems very well done. There is a separate jagged edge that you can use first if you want jagged edges. I'm happy with that. It's just a small tool, but it does what I was looking for.
