
Like all confectionery, this one needs some "breaking in". I remember loving my mother's old pastry towel. This material is not as thick as the old one. And you need to put something underneath so it doesn't slide all over the countertop. It's great to have circles to measure the dough, as well as ruler marks if you're rolling out something square or rectangular (I use this to roll out pigs in a blanket and it's a lot easier.) Overall I like it, I I will use it over the years, can't wait for it to run for a bit. The roller pin bushing is a big bonus. This really prevents the dough from sticking to the rolling pin. I have one of the new rolling pins, that should be the best but the dough sticks to it; Perhaps the rolling pin itself needs to be smooth to hold the flour in place. All this was decided by the lid of the rolling pin. Now I have a good heavy duty ergonomic rolling pin and am happy to use it without removing the dough.
