No ninja chef's knife? Then you need it.

I don't have a $150 chef's knife. I can't cut vegetables (or anything like that) with high precision. There was a time when chunks of my fingers ended up in a tossed salad. My chopped tomatoes are more like mashed potatoes. I can lean on the blade and crush the garlic cloves: what then? No, I'm not a cooking ninja. Despite my inability, I have always found the mandolin slicer to be an Epicurean excess. I mean, why spend countless dollars on a leg knife? Three reasons: speed, efficiency and consistency. Add security. There are two main types of mandolin planes: straight blades, perpendicular or slightly inclined to the direction of the cut, and V-blades. Straight (90 degree) blade slicers are not very popular today as they tend to shred rather than slice. Consider slicing a tomato by piercing it with a knife without cutting it: it will crush to a degree. Protractors (guillotines) are better, but they apply a lateral force to what is being cut. Think again of a tomato: it is crushed on one side - towards the downward angle of the blade. Is it significant? For many yes; others question whether slightly distorted vegetables or fruit matter. Double-edged blades and the steep angle of the V-blade mandolin eliminate this problem. All mandolin slicers have some degree of customization. The thickness of the slices can be adjusted by raising/lowering the table or changing plates. This V-blade mandolin has detachable plates of 1.5mm, 2.5mm and 3.5mm; It also has 3.5mm and 7.0mm straw plates. After comparing the two, I prefer the V Blade Mandolin removable plates because the fixed table's sharp blade is not compromised when cleaning. Unlike some, the V-blade mandolin doesn't have blades that create squiggles, waffles, squiggles, or other pretty patterns that would destroy my teeth with one bite. What's the point? "Oh, Eddie, what a pretty salad." "Shut up and eat!" Cleanup is easy and efficient as the removable plates eliminate nooks and crannies. The included toothbrush-like brush keeps fingers off the blades, as do the included protective gloves. The frame is made of thick stainless steel and the hard plastic parts are made of ABS plastic (extremely strong, durable and non-toxic). To me this is an excellent, well made, simple yet practical all round machine with its inherent safety features and ease of use. Please accept my sincere recommendation.
