To be able to accurately determine the water temperature for different types of coffee, tea etc. something like that. Yes, and that's why this kettle gets four stars. The built-in thermometer shows an error of 5 degrees - that's too much if you care about the taste of your drinks. I was going to put three in it but my wife likes the look of the teapot so it will be four. I think I might return it for another, but who knows how far that will go? UPDATE: I sent the first one back and replaced it. The second arrived with a plastic bag around the kettle in the box which the first didn't have so I'm wondering if the first was a return. The second is accurate to within a few degrees in the critical range of 190-205 degrees, which makes it good enough for me. But at lower temperatures it shuts down horribly so there's no point in heating the water for yeast fermentation or anything like that!
