Cheesecake? on Accessories for cutlery and knives

Yes. That's why I have mine and that's the only thing it's used for. I'm making 12" x 3" cheesecakes and need to cut them into 12 equal slices. Each cake weighs a ton. Each piece is a meal in itself. When the cheesecake is done, chilled, and ready to slice, I transfer it to a 12" circle (food-grade cardstock) and then place it in the center of the Omnigrid spinning mat. Directly above I take my 14 inch cake cutter and carefully cut through the filling (with cooked fruit) following the 30° marks on the mat. I make 6 cuts across the cake from a 30° mark to the 180° mark on the opposite side of the cake, noting 12 pieces and slicing the fruit that is on those lines. Next, using a long piece of unwaxed, unflavored dental floss, I pull the floss from the top through the cake where the discs in the topping began, through the crust to the cardboard circle at the bottom at the appropriate 30° marks. The result is a gorgeous 12-inch cheesecake with 12 absolutely identical slices. The rotating mat allows me to make a cut, then rotate it and make the next cut until I have 12 identical slices after 6 cuts all over the cake. The carpet makes this rather difficult and complex task quite easy. The 30° guides are crucial for perfect cutting, and the fact that you can rotate the mat into positions where it stays stationary makes the task a lot easier than if you only had 30°. ° marked. Only markings make perfect slices possible. Rotation makes it easier and thus makes perfect slices possible. I can make my giant cheesecakes without the Omnigrid turntable, but when it comes time to slice them I can't expect perfect cuts. Now I can with this very useful tool.
