Very satisfied skeptics

After reading the reviews I bought these sharpening stones with caution: the negative reviews seemed to be valid and I wasn't sure if all the positive reviews were real. I had the same feeling with all of the whetstone vendors on Revain - they all seem to be selling roughly the same product. I bought the 400/1000 and 3000/8000 combos and tested them the day they arrived. As our Global knives haven't seen a real stone since they were new it took a while to get a proper bevel and even ridge at 400, around 30 minutes, but the subsequent sharpening only took a few minutes and I was able to achieve a mirror shine. Beveled and razor-sharp even with a 3000 grit; 8000 really wasn't necessary, but I did it anyway. I sharpened two large chef's knives and a double knife; The stones held up well and stayed flat - you need to make sure you use the full area. Based on this experience, it seems that people who complain about not being able to get the right finish shouldn't blame the stones - results can vary. Simply because of the quality of the steel.
