While I don't believe these blades were forged and assembled in Japan, I am sure the steel is from Hitachi. After using them for a few months I can say that they hold the sharpness very well. The Pakka wood handles are not slippery and the balance is almost perfect. These knives appear to be on par with the much more expensive offerings from Wüsthof. While they probably weren't forged in Japan, you'd never know about them if they didn't bear the hallmarks of a Japanese manufacturer. These are excellent knives.
