The trick is to measure 4 to 6 ounces of ground beef on a scale to ensure consistency. I personally use exactly 150 grams per 6.5 inch cast iron skillet with lots of oil. The small size of the pan and the sizzling oil makes a mess on my stovetop but wow what a burger. The indentation in the center helps keep the burger flat and also fills with juice when ready to flip the burger. I bought two of these presses and broke one right away. Pen.
