This is my first encounter with a professional stainless steel cooking set. Upon unpacking, I was immediately struck by the massiveness of this cookware, almost as strong as cast iron. The design and craftsmanship cannot be overstated. In reviewing the overall performance, I found that most medium-cooked foods were cooked well on all surfaces, and cleaning was usually done with hot water, making them almost non-sticky. although stainless steel is not usually advertised as such. When I upgraded it to high heat and oil cooking, the overall performance was excellent, with no uneven cooktops or areas of varying temperatures. However, the cleaning was a bit more intense as the high temperature of the oil led to the formation of a sticky film that remained after cleaning. While this would be expected, my only observation is that in some cases when cooking, the dishes can be a bit more difficult to clean. However, I don't want to and don't want to wash them in the dishwasher now. The finish on these dishes is matte and very shiny and I suspect the dishwasher degrades this quality. higher smoke point. I hope to see if this affects the cleaning difficulties. I'll update this comment if I find a better alternative that reduces resin formation from high heat. A cooking set of this professional quality will and will come at a significant price. I would say if you are seriously interested in a professional grade kit that will not need to be changed in a few years then it is definitely worth the price. I really hope to pass them on to my daughters in the future. If you can afford it this is actually a good buy as it doesn't look like it will need to be replaced every few years. I highly recommend.
