I can only say WOW! What great results! I wanted a smoker, but I didn't want to pay $5,000 for the one I want right now (ed.). Stumbled upon this cauldron smoker and got curious but still very skeptical. I decided to purchase after seeing Adriana in Philly Kitchen making some recipes. It's one of those things that makes you feel bloated, but I've followed her methods for ribs (I've made babybacks or spare ribs instead) and I'm surprised. The ribs are tender, juicy and taste great. They have excellent bone traction. I put them under the grill for a few minutes to get a crust on, but wow! It's definitely a home game! I've only smoked the ribs a couple of times, but both times the results have been excellent and consistent. Just one caveat: you really need a powerful outdoor extractor hood or your house will smell of smoke for weeks, even with the windows open. I'm preparing my next cook on deck. A very worthwhile investment!
