Deadly accurate. When the entire shaft is in the milk. Otherwise you will get inconsistent temperature readings. I've used this several times just to compare how it feels on my hand. After that I used it as an air temperature sensor in the automotive industry. Which actually works quite well. And because different media don't come into contact with different parts of the shaft (it's just air coming out of the vents), the readings are accurate. The response time to the pressure gauge is quite good. Since it's not digital, there's obviously a few seconds of lag when switching from something hot to cold, but that's nothing to complain about when it's only around $14.
