Sharp and straight. In fact, that's all the knife needs. Now you can bargain or spend more on something more comfortable. Better steel, more ergonomic handles, storage block, sharper edges, you name it. But whatever you get, it should be sharp and straight. These knives are NOT straight! I couldn't figure out why they weren't lined up correctly in the block so I took them out and lined them up and almost all of them were bent to some extent! Point the handle up and the blades will tilt to one side (all to the right when looking at the knives from above). $300 and they can't make straight knives!? Save yourself the frustration and returns process and find something from a company that actually knows how to make knives!
