Expensive but worth the investment.

A knife is only as good as its edge is sharp and cared for. An inexpensive $25 Victorinox chef's knife with a blade in good condition will be much more valuable and useful in the long run than, say, a $200 Wüsthof with a neglected blade. If you cook a lot that requires you to cut or slice and/or you have a lot of knives (especially expensive ones) that are important to you, you need a sharpener. . While most knife manufacturers use the same angles, some blades, such as B. Japanese Santoku chef's knives, very thin angles or are only sharpened on one side. If you're not a steel sharpening pro, this sharpener's selectable angle makes it easy to maintain precise angles. Many consumer kitchen knives use a larger angle (>20 degrees) to cater to general consumers who don't care about their knives. . This provides durability and redundancy, but also compromises the cutting ability of the blade. Edgeware angle selection can allow someone to either keep the manufacturer's edge or tweak their blades to have thinner and sharper angles (making the edge a bit more brittle with some elevation). Conversely, especially with pocket knives that I carry on a daily basis, I use a larger angle to improve durability. I am very happy with this purchase. The large handle makes it hard to injure yourself while sharpening and sharpening the blade, and makes it easy to stay calm while stabbing the knife. If you are planning to give someone a nice knife, you should also give them a nice sharpener.
