When the coffee machine last belched three years ago, I decided to clear out the counter and find an alternative breakfast drink. I wanted to avoid a lot of caffeine, but not sacrifice flavor. After much trial and error, this Scottish breakfast tea was the answer. With two teabags I can make 40 ounces. a tea kettle strong enough to hold halves but not bitter if left overnight. It retains its fresh flavor even after being microwaved, a trick coffee never learned. I love the malty flavor and while it claims it was originally formulated for soft water, it feels great in my very hard water. For best flavor, start with cold fresh water and bring to a boil before placing in bags. There's some science to this that I won't go into, but it matters. If I could only pick one hot drink in my life, it would be Taylor's Scotch Tea with Breakfast and Half.
