Parchment paper was disappearing from home kitchens when I was a small child, displaced by things like aluminum foil and Saran. In recent years it seems to have made a comeback, perhaps because it’s not only better than foil for many tasks, it’s also biodegradable. I find it absolutely indispensable for steaming, baking, and other cooking tasks. This is a quality parchment paper, and buying it in 205 square foot rolls does bring the price down to just under 7 cents a square foot. That’s within a penny of US made parchment papers, and buying a US-sourced product means it didn’t have to be shipped thousands of miles from China to get here. Something to think about if buying green is a consideration.
