Instead of using a giant pre-cut sheet. I can choose the length that allows the best use of the product. Why use a section designed for a large steak when you just want a few small boneless chicken breasts sous vide? My borrowed Anova sous vide came in about 5 packets but I prefer this more flexible option as I'm deciding if sous vide would be a good option to permanently expand my cooking options.
