Response time is slow

Temperature reading seems accurate. The problem I have is that the response time is slow due to the mass of the probe. During the first measurement, the region to be examined cools down due to the heating of the fork probe. It takes 3 to 4 probes in different places (or preheat the tip of a fork first) to determine the actual temperature of the meat/fish. The display doesn't have enough contrast to read well indoors. You'll have to use the display backlight and turn it on a few times (it has an auto-off feature that you can't override) while the probe heats up to eventually get the cooking temperature. On the plus side, the handle is long enough that you won't burn your hand when using it over a hot grill or sticking it in the oven to take the temperature.
