I have quite a few knives, many of them from expensive brands like Shun, Wustoff etc. Lately I've found that lesser known brands are often not inferior to more expensive ones. What I'm looking for now is the attributes of the knife, not the brand. That tells me something about the quality of the blade - Rockwell hardness, blade angle, VG-10 steel and sometimes Damascus finish. Most of these determine how long the blade will hold the blade, and a 15 degree Asian blade angle tends to be a sharper blade. I was looking for a utility knife that would be less cumbersome than a regular chef's knife for some jobs and I found this one. Since this knife has all the qualities and features I'm looking for, I decided to give it a try. Unfortunately the first knife I received was very dull and I couldn't sharpen it enough to use it. Because some items can slip during quality control, I decided to contact the seller. I got a reply the next day and they offered to send me a replacement without returning the original knife. They sent a replacement the same day and I received it in a few days. This is a huge plus for this seller as they secure their products. The knife is very sharp and I like it very much. The handle is comfortable to use and has a nicely patterned texture, making it easy to hold even with wet hands. The blade has a beautiful damascus pattern which should improve the quality of the blade sharpness. Although the guard that comes with the replacement knife is too short to cover the entire blade, the guard on the original knife fits perfectly. So I am a happy camper and completely satisfied with this knife. I used it every day to cut tomatoes, onions, radishes and various fruits. It worked flawlessly without chopping softer foods like tomatoes and slicing hard veggies with little effort. Based on my experience I can only recommend this knife. It has kept the clarity and the customer service is excellent. I hope this review was helpful to you and I will update this review if my opinion changes.
