Review on Victorinox Oyster Knife with 2-3/4-Inch Hooked Tip and SuperGrip Handle in New Haven Style by Debra Riley

Revainrating 4 out of 5

The thin blade design works best with a slightly different technique

The very thin blade tip of this Boston-style take on the oyster knife feels fragile - my knife tip is quite slightly bent after the first use on a dozen oysters . However, this unique knife has many benefits if you adjust the extraction technique a bit. I believe it can be a solid and reliable knife if you're willing to pay attention to putting the blade right into the loop. a bit more than you normally would - with a slight sideways motion rather than twisting around the handle - the thin blade *just* slides into the hinge much more easily than a regular knife with a thicker blade. This is especially true when the loops on a batch of oysters are typically fairly even/straight. About 1/4 inch from the tip, the blade is stronger and seems less likely to chip, so it can be used to open the hinge. The knife also seems thin enough to use for the side entry method, although I haven't tried it with that yet. Instead, we recommend considering it as a good option for certain types/sizes of oysters. **Update: I've tried picking 1/2 ounce oysters with this knife and it works really well due to the very thin blade tip - as always when you find a side seam, something I still elude. some oysters. ***Update #2: After carving no more than a dozen oysters with this knife, I snapped off the tip of some of the larger, stronger handles with blue dots; a small dent about 1/16 inch that I easily fixed in minutes with a file and whetstone. So no no I'm still a fan of this knife for what it can do with such a uniquely thin blade. I would first and foremost caution you against purchasing this knife at all if you value a blade with a very thin profile, and note that it probably won't be your only oyster knife. While the thin blade is a compromise, but given the modest price, I've ordered another one as a reserve.
