Review on Smiths 3001 Diamond Sharpening Stone for 10 Inch Blades by Michael Gonzales

Revainrating 4 out of 5

Good deal, sharpens quickly, but.

On the whole, this diamond steel is a very good deal, but. at 800 grit it is too coarse for a razor sharp edge. Diamond stones cut incredibly fast which is great for restoring an edge to very dull stainless steel knives. (Diamond stones are overkill for soft (carbon) blades.) However, 800 grit stones leave behind a lot of roughness, or "teeth," and cutting feels like sawing. A sharpener that works quickly often removes more metal than necessary, shortening the life of your blades. To give you an idea of what it takes to get a sharp edge, I used an 8000 water stone for polishing.
