One burner broke but the one that worked taught me I don't like induction.

On a good burner to keep the temperature, it fluctuated in the range of 30° (ie set at 200°, you'll see between 190-210°) with 0/100% blow; create an unusual and frustrating dining experience. It heats up the pan quickly, but without anything other than the pan to keep it warm, the pan cools just as quickly. This means you get consistently hot/cold/sizzling/cold/sizzling/cold cooking. The other burner was defective and did not exceed 70° until it was increased to 200°, after which it accelerated to over 350° and did not stall. Maybe everything was broken; I'm not sure. Basically I brought it back because I didn't like the results I got, which is obviously inherent to induction. Induction heats the metal itself, but this only scorches the outer surface of what's being cooked, as my (cast iron) cookware doesn't have enough bulk to absorb enough heat to blast through anything other than eggs satisfactorily. Much better I like my little little spiral burner which is cheaper and more stable and doesn't have a pair of noisy fans.
