These things are super slippery. Nothing sticks to them. Raised bulges across the entire surface also prevent food from sticking and ensure more even cooking. I wouldn't try cookies on them I guess. I don't, but I think those same raised spots might give you a cookie headache. Can't vouch for longevity over the years but in the month we've had them they've been great and really easy to clean. The lack of metal will also help keep them from turning into a rusty mess like most do. Now we have to figure out how to stop the family from slicing pizza right on them.
