My hobby (buying and) sharpening Japanese kitchen knives. I use the standard process of 1000 grit, then 4-5000 grit, then finish with 8-12000 grit. All on Japanese or Norton waterstone. To bring the knife blade to my perfectionist level (OBS, to say the least), I tighten the knives. For this I use leather, MDF or very smooth pine boards. In all cases I add diamond paste or spray to the lines. This abrasive is very important as it removes very fine burrs and polishes the edge. Of all the diamond products I have used, the DMT Diamond Spray is one of the best. A few light sprays, let dry. Works wonders. Polished razor blades. I've seen complaints about the price! Well, there is a price for a superior product.
