Review on Wusthof Stainless Kitchen Shear: Durable ๐Ÿ”ช and Versatile Scissors for Professional and Home Cooking by Janet Brown

High quality but inaccurate description

Inaccurate description: no bone bag. In case you don't know, it's a groove cut into one side of the scissors to catch the bone you're trying to cut, otherwise it could slip off the edge, making your cutting job more difficult. smaller than I thought but still comfortable enough in the hands of my size XL. I wouldn't want to use them all day, but for weekend cooking that's no problem. They came pretty sharp and appear to be of very high quality. I think I could use them for years for cooking and opening packages or just cut what I need with scissors or scissors and they will work like new. These scissors are clearly built to last. Some say they rust pretty quickly. I just received this so I can't tell what my will is. While I don't want to deal with rust, I don't think it's too big a problem. The rust suggests to me that they used a higher carbon steel which is extremely strong and will not break. Stainless steel can be very brittle, causing the tips of your knives to snap if you drop them. Some scissors will bend if you squeeze them too tightly. High carbon steel does not. But it rusts. If your only complaint is rust, grab some steel wool and wipe it down. Apply some vegetable oil to the fur after washing to prevent rust. I want my scissors to be durable, I'll take some rusting as a compromise. Only my .02.
