(Updated) User Error working fine
*Edit* Turns out my switch only supports 1GB SFP while UDM Pro supports 10GB. Auto-negotiation failed, but 1GB must work. So the rule of thumb is don't blame the cable and make sure your SFP devices are actually SFP+ certified.
