High-quality tool for the food industry. As good as a Victorinox Fibrox chef's knife for half the price or less.

Mercer Culinary is a brand that most consumers are not familiar with. Mercer knives are sold primarily through restaurants and other retail outlets to foodservice and hospitality businesses. But in the industry, Mercer kitchen knives are one of the most popular brands of reliable, high-quality, durable knives for everyday use in the hospitality and food processing industries that probably put in more work in a day than the average home chef does in a year. . The Mercer Culinary Millennia 8" Chef's Knife and the entire Mercer Millennia line of knives represent exceptional value for a knife of this quality. It is a simple and practical tool made from Japanese carbon steel. The knife it most closely resembles is the Swiss made manufactured Victorinox Fibrox 8" chef's knife. The main quality differences are the handle and your grip preference over the other and the fact that the Victorinox blade is more chrome plated while the Mercer blade has a more polished finish. Both have an excellent edge right out of the Box. Mercer Millennia is slightly lighter (approx. 175 grams) compared to Victorinox (approx. 200 grams). Blade shapes are more or less identical. Where Mercer wins is in price with no apparent difference in quality. An 8" chef's knife from Mercer Culinary Millennia is typically $15-$17, while a Victorinox Fibrox 8-inch chef's knife is regular turns out to cost $30 to $45. The Mercer Culinary Millennia 8" Chef's Knife is a durable, dependable, sharp, quality cooking tool at a bargain price. I have owned several Victorinox Fibrox knives for a long time, but I was so impressed with the first Mercer Culinary Millennia 8" Chef's Knife, that I immediately bought two more plus a 10" model of the same knife. RECOMMENDED.
