This thermometer is not as accurate as supplied. It does not pass the boiling water test. Boiling water is 212 degrees at sea level (where we are), but our thermometer reads 200 degrees if left in boiling water for more than a minute. Reached 200 and stopped. Luckily, it can be calibrated with a wrench while holding the hex nut on the back while turning the dial to show the correct temperature. This is not easy when the thermometer is in boiling water, so be very careful when doing this! First find the wrench that fits the nut on the back of the thermometer. Then place the thermometer on a small pan of simmering water and wait for the thermometer to settle to the indicated temperature. If the dial doesn't read 100°C/212°F, turn off the heat and use a heating pad or heat-resistant gloves to remove the thermometer from the pot and use a wrench to hold the nut on the bottom while turning the dial Select. until the temperature reading points to the 100c/212f indicator on the dial.
