Incredible 8 inch cooking blade

Wow! What a pleasant surprise. I have been working as a professional chef in restaurants and clubs for 38 years. I bought this blade as a gift and then ordered a more expensive famous blade because I didn't want to give away a cheap knife. Chef Mercer 8" is what I'm keeping to myself since I couldn't cancel the order. What an $18 blade. I have several high quality blades and some straight carbon Bob Kramer blades which are my most prized possessions. Nonetheless, this is a Mercer handy and sharp and it takes its rightful place in the holder along with my high-end blades The blade is thin and light The cuts are quick and precise Tried on ripe tomatoes and bread still warm It cuts both sheets of thin paper Thinner than my Kramers I could buy this blade too if you have a paring knife and it kicks.
