The gold standard for chef's utility knives

If you have one knife, this one should be it. I've been a professional chef for over a decade and I still use my 8" Wüsthof chef's knife that I bought for cooking school 11 years ago. The kitchen team went along with it and received it as a gift to one of our colleagues. The weight and balance are great immaculate, it holds a very good edge and is easy to sharpen. The 8" Full Roller Chef's Knife is the most versatile knife you can have. My 11 year old knife was sharpened about halfway to the Grantons and still carries the load like a boss. Although this new one was a gift and I obviously haven't used it myself, I think the new grip material would be a definite improvement over the old Bakelite grip I have, which has a few cracks at this point (although I've heard that Wüsthof will fix it for you). Don't buy globally. Don't buy Henkel. Don't buy Shun. Don't buy a Victorinox. Buy this. It's not that these other manufacturers don't make good knives, but this is the one that will see the most action. From a pro who has used this knife for hours every day and tried dozens of other brands and styles, THIS IS ONE.
