Very smooth to allow cheese to slide
Slippery so you really need to hold onto the cheese or it will slip while cutting. Cuts well as it holds the wire well and is very easy to clean. Although each slice leaves a thin line of cheese on the counter where the wire runs through the metal so you'll have to clean up that mess, it's kept as a backup. Ordered a stone one to use most of the time.
