While it's possible for a person to be sensitive to erythritol, it's far more likely that gas and bloating is due to the introduction of a new strain of probiotic into the gut. I think this is especially true for people with a poor gut microbiome. Additionally, whey itself has been known to cause bloating and gas, partly because it's so easily absorbed by the body.
