I use this sensor to monitor the temperature of streams, mostly out of curiosity but also because I dive in those streams. Although I knew that the water temperature in our mountains gets very cold in the winter (it's mostly covered in ice), imagine my surprise when I found a stretch of open water with a temperature of 32.1 degrees Fahrenheit. I knew the water was cold at this time of year but still! Apparently it just keeps the movement of water open in those areas. Some people have reported a slow response, but I found the sensor to respond quickly in liquid; less than 3 seconds for stable reading. In air it takes some time to settle down, up to 20 seconds or so. I suspect this is due to the weaker thermal cohesion of air compared to water.
