
Let's start with the cons/solutions as the title gives my opinion on cold brewing. It looks delicate and complex. After putting it together a few times you'll find that the spacers are in perfect spots so you'll never hit glass on glass or glass on the counter. After a few brews, I can handle this device with confidence when preparing, brewing and washing/drying. Only two problems remain: The really tricky part is putting your hand far enough into the upper reservoir to grab the small silicone tab to remove the valve seal. If that little tongue was 1/2 inch longer I could grab it with ease. The second issue is that while the pieces are drying I still have paranoia that something might knock them over and break them. Pains. I wonder if I got it right on the first brew because 60g of coffee is touching the dripper and at that point it's impossible to see the drip rate. The first portion tastes good. I grind finer and not only the coffee tastes great. For now I can get it down to 1 drop per second as recommended. I feel like the extraction could be a bit better, so I'm reducing the grind. Now that's amazing! I start with washed Colombian and anaerobic blends and the cups are light, smooth, fruity and rich. New Mexico Pinon coffee has sweet and nutty notes with just the right amount of bitterness to keep it honest. pleases. So what's the problem? I really think you need a grinder to do this, but if you're considering a $70 cold brew, you might already have one. 60g standard grind just isn't the right size to see the drop well and set the valve properly. You have to play with your volumes. Maybe try 40g of coffee with 470g of ice and water? Pros: It looks great on my desk, it's easy to shake and clean, you don't have to worry about brewing for too long, and did I mention it's the best cold drink I've ever had? The Inception lid is a great design choice. It's also good that I can use the same filters for the upper filter as with my Aeropress. It's so much better than any can bag, french press, toddy or other cold brew method I've ever used. $70 pays for itself quickly if you're currently buying a cold packaged drink or at large coffee shops. Recommendation: Methodical Coffee - Colombia, Andres Cardona. This coffee has notes of cucumber and jalapeno that really shine in this brewery. Would definitely be interesting in a cold brew tonic.
